Putting a bite in meatless

Kudos to Matt Cameron for calling for a true "Meat-Free Monday" in the dining halls of U.Va. ("A meatless proposal," Oct. 7). As a vegetarian and a recent college graduate, I understand how helpful it is to have tasty, nutritious plant-based options available on campus. A recent survey conducted by ARAMARK found that 30 percent of college students seek out vegetarian or vegan options when eating on campus, whether or not they identify as vegetarian or vegan. The university should be commended for its promotion of Meat-Free Mondays, but Cameron is right to ask the University's dining services to throw its full weight behind the initiative to encourage students to explore meat-free cuisine as a simple and delicious way to help protect our health, the environment and animals.
